Summary :

Responsible for ensuring that all Resort guests dining in Cucina, or through In-Room Dining, have the highest quality culinary experience possible while maintaining a profitable and environmentally aware department. Under the leadership of the Executive Chef and Sous Chefs, handles all prep and line cook duties with attention to quality and consistency.  Also assists banquets and the employee cafeteria with their culinary needs, as required. 

 

Job Responsibilities include (but are not limited to):

  • Exhibits a professional demeanor through appearance and by maintaining a positive attitude toward all co-workers, managers and guests. 
  • Capable of working as a part of a cohesive culinary/kitchen team.
  • Adheres to all brand standards to ensure that all guests have an outstanding culinary experience.
  • Ensures that each course is a celebration of culinary talent in both taste and plate presentation that incorporates flavor, a variety of color, height, texture and cooking techniques.
  • Capable of organizing the kitchen line for the proper pace and follow of the business.  Thinks ahead and anticipates the next assignment.  Handles special requests and "re-makes" graciously and efficiently.
  • Assists in the coordination of all line prep duties, receiving and storing product.  Also helps with banquet production, garde manger and pastry as needed.
  • Works effectively with fellow cooks, Chefs, servers, expeditors, F&B managers and Stewards. 
  • Capable of stepping into the dining room and interacting professionally with all guests in the absence of the chef, as requested. 
  • Stays abreast of all culinary trends and works with the Executive Chef to create innovative daily features and special offerings. 
  • Follows all menu standardization of portion controls.                                                                                                             
  • Practices “clean as you go” techniques that ensure the kitchen, dish room, storage and heart-of-the-house areas are both clean and safe.
  • Responsible for maintaining clean and organized storage areas for all food items and for proper rotation.
  • Assists the Chef in the enforcement of internal cost and labor controls.  
  • Helps to maintains all par levels for food items, kitchen supplies and all other necessary products needed to operate the kitchen.
  • Responsible for assisting in the production of inventive and high quality guest room amenities, to the specification of the Executive Chef/Banquet Chef. 
  • Develops strong working relationships with other Departments to ensure communication and teamwork is at an optimum.
  • Oversees the compliance of state health regulations in the safe handling, storage and service of all food items.
  • Follows all safe work practice procedures. 
  • Complies with all Resort policies, procedures and standards of operation.
