Sous Chef - Nutrition Services

Swedish Medical Center is looking for a Sous Chef (1.0 FTE, Day Shift) in Nutrition Services at Swedish Edmonds in Edmonds, WA.

The Sous Chef functions in a supervisory capacity to plan, direct, and evaluate the production and presentation of food for patients, cafs and catering to ensure that the standards of safety, nutritional value, quality and performance are maintained. Under the direction of the Executive Chef is responsible for recipe, menu and concept development within established departmental guidelines. Responsible for overseeing departmental receiving, and inventory management. Ensures conformance with JCAHO, state and local regulations as well as compliance with all HACCP, department, medical center and SMC system policies and procedures.

In this position you will:

  • Standardizes documents and tests new recipes for patient, caf and catering menus in accordance with established nutritional, quality and cost criteria.Under the direction of the director, contributes to the development of menus.
  • Responsible for the accurate costing of recipes and menus generated from approved items, ingredients and vendors.
  • Coordinates and executes catering for special events with guidance of the director.
  • Participates in receiving and inventory functions, assuring conformance with all applicable regulations, standards, policies and procedures.
  • Maintains a clean and safe working environment. Handles all food in accordance with food handling guidelines issued by state and federal agencies.
  • Consistently checks equipment to ensure proper working order; reports all safety hazards. Follows safety rules and policies and handles materials in a careful manner
  • Coordinates the training of the patient, retail, and production staff to ensure the appropriate presentation, portioning, temperature and safe handling of all food products.
  • Submits recommendations for capital budget.
  • Works well under pressure of stringent time constraints and remains calm and organized.
  • Consistently adheres to the Swedish/Edmonds behavioral standards of excellence.

Qualifications:

Required qualifications for this position include:

  • Degree in culinary arts (certification of completion from and accredited culinary trade school (2-4 year program) or ACFEI apprenticeship program (certificate, 4-5 year program).
  • Current State of Washington Food Handlers Permit.
  • Current Servsafe or other food safety or HACCP certification upon 90 days of hire.
  • Minimum 2 years culinary experience in a high volume operation required.Working knowledge of complex, multi-faceted high volume food service operation.
  • Experience in a customer service environment with demonstrated excellent customer service skills.

Preffered qualifications for this position include:

  • Bachelor's Degree BS/BA in Hotel/Restaurant Management or related field.
