Head Baker



POSITION SUMMARY 

Corvus Coffee Roasters is building an artisan bakery and is looking for a Head Baker to lead the project! We are taking our obsession of finding the highest quality coffee and making deep investments in all levels of the supply chain to bread! We will be launching this project in our newest location in Littleton, Colorado in concert with a reserve coffee roastery and espresso bar. We are looking for someone to lead the bakery team that sources and mills flour on a New American stone mill, maintaining and developing starters for rustic bread and pastries, develops supplier relationships for fresh produce, meat, cheese, and grain, and can take full ownership of executing a world class baking program from start to finish. 

The ideal candidate will have a minimum of 3 years of experience working in a position, overseeing the operations of an artisan bread, pastry, and food program. Proven management, in depth understanding of a bakery P&L, and strong operational skills are required and need supporting recommendations. You must be the type of person who enjoys a changing and challenging menu, and gains energy from creating seasonal and unique breads and pastries. Running ongoing operations and overseeing constant recipe development need to both be exciting to you. 

Position Summary and Responsibilities: 

The Head Baker oversees the baking team, all bakery production, and purchasing. The Head Baker will be responsible for its operational efficiency, cost objectives, customer delivery, presentation, safety and quality results. 

Bakery Operations 

● Direct bakery operations to ensure product quality and consistency as well as efficiency of operations throughout the changing seasons and fluctuation of production. 

● Lead production organization through effective planning, organization, staffing, training, and necessary systematic enforcement. 

● Work with the retail team to ensure guest satisfaction as well as product fulfillment and order accuracy ● Oversee ordering and coordinate inbound receiving, outbound shipment, daily delivery schedule and inventory logistics 

● Quarterly inventory of goods 

● Management of company COGs as well as purveyor costs 

● Maintain maintenance schedule as well as equipment maintenance and necessary repairs ● Recipe and development of seasonal bread and viennoiserie products 

● Food Costing 

● Develop standard work and process controls for all new product 

● Salary exempt employee/work week based on production needs 

● Constantly setting goals for gross margins, and reducing overhead while creating new opportunities to increase sales is a key function of the head baker 

● Must be an organized and effective planner, responsible for managing menu offerings in conjunction with bakery labor and staffing.

● The ability to plan effectively and delegate essential tasks is key to ensuring these projects accomplish the objective while finishing on time. 

● In charge of communicating new bakery offerings in an engaging manner and creating a system for communication on a regular basis with retail staff. 

Team Management 

● Managing the baking team, scheduling as well as keeping to an outlined labor budget ● Review and submit hours of baking team for bi-weekly payroll submission 

● Communicate and solve production-related problems utilizing employee involvement and open two-way interactions 

● Supervise, develop and coach direct reports through goal setting, clear expectations and regular communications 

● Comprehension of all baking shifts and positions as well as fermentation processes ● Maintain cleaning schedule for porters and BOH staff 

● Responsible for dealing with conflict, interviewing and hiring, performance reviews, terminating employment and building a bakery culture that fosters an engaged staff 

Skills and Abilities 

● Experience: head baker or bakery manager, with production experience preferred 

● High level of experience in bread and pastry production 

● Strong problem solving skills with attention to detail 

● Ability to research problems, present recommendations and implement solutions 

● Manage multiple tasks and be flexible by adjusting priorities 

● Ability to communicate and work effectively with all levels of organization 

● Familiarity with multiphase project planning and management 

● Computer skills, Excel, Word, etc. 

● Will require a creative, motivated, and self driven individual. 

Ongoing Duties 

● Coaching to increase productivity of staff and adherence to operational and cleanliness standards ● Reviewing operation procedures to ensure clarity and effectiveness of materials 

● Ensuring all policies and procedures have written companion materials 

● Regular meetings with owner to set goals and monitor progress of projects 

● Other Duties as Assigned
