Sodexo is looking for an Executive Chef 1 in Brooklyn, NY

Brooklyn's only academic medical center, SUNY Downstate encompasses the College of Medicine, School of Graduate Studies, College of Nursing, College of Health Related Professions and extensive research facilities.


As the Executive Chef 1 you will be managing the BOH staff, training and developing a culinary team of up to 20, menu planing, and overseeing the catering needs. This role does not require for you to be hands on daily in the role.

The ideal candidate:

  • Supervises the day to day operations,primarily food production for patient meals,cafe and catering.
  • Purchases all raw materials for the department
  • Responsible for inventory management, product storage and distribution
  • Accountable for the safe food handling of all product in the kitchen
  • Utilizes Sodexo's Food Management Process for forecasting, portion controls, recipe compliance and cost containment
  • Participates in the planning, preparation, presentation and execution of catering events
  • Will also oversee patient meal assembly
  • Conducts Quality Assurance audits- Tray assessments, tray accuracy audits, pre-meal meetings and taste and temp panels
  • Conducts daily Culinary Planning Meetings with production staff
  • Conducts safety audits
  • Conducts safety and skills in service for staff

Position Summary

Provides culinary leadership within a small sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through executionKey Duties-Executes the culinary function-Customer & Client satisfaction-Manages food & physical safety program.


Qualifications & Requirements

Basic Education Requirement - Associate's Degree Basic Management Experience - 2 years Basic Functional Experience – 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
