Executive Chef 1

Unit Description

Sodexo, Corporate Services is seeking for an Executive Chef 1 for  Federal Reserve Bank of Chicago. This position will report to the Executive Chef 2 and General Manager. Population approx. 1800, MV $3.5ML., 30 FTE’S.  Sodexo Inspire account.


Typical Schedule

Monday- Friday


Evening catering events as needed

Weekends and Holidays as needed


This position will be:


Responsible for daily kitchen production for Retail operation and Catering for $3.5M in sales. 

Interface with Retail Clientele on a daily basis

Manage hourly production staff to Sodexo recipes and standards

Maintain in-unit production sheets, HAACP records

Post hourly production staff schedules in Kronos

Manage regular cleaning schedule

Train hourly staff on retail stations, new concept roll-outs

Daily production meetings with Management Staff and hourly staff

Responsible for maintaining inventory detail in TMC, ordering pars, ordering specs, vendor relationships, monthly physical inventory

Maintain M3 Standards for Retail Ops

Support ECII for catered events, requires occasional late afternoon / evening shifts

Support district accounts for large events, openings and training opportunities as needed

Manage Waste Watch and Compost program


We are looking for candidates who will:


  • manage the daily food production including production planning and controls;
  • ensure Sodexo Culinary Standards including recipe compliance and food quality;
  • Artisan account, which requires a chef driven program with local sourcing
  • manage food costing, controls and compliance;
  • develop menus and manage inventory;
  • have high expectations for customer service and quality of food;
  • have the ability and willingness to develop and train frontline employees;
  • have a passion for food and innovation;
  • have knowledge of special diets and allergens; and knowledge of Sodexo Food Management System (FMS) is preferred.
  • a strong culinary background, with the demonstrated ability to stay current with new culinary trends;
  • excellent leadership and communication skills with the ability to maintain the highest of standards and implements company policies;
  • previous experience working in a high volume facility; and
  • strong management skills.

Position Summary

Provides culinary leadership within a small sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through executionKey Duties-Executes the culinary function-Customer & Client satisfaction-Manages food & physical safety program.


Qualifications & Requirements

Basic Education Requirement - Associate's Degree Basic Management Experience - 2 years Basic Functional Experience – 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
