Post employee schedules from management in a timely manner.
Help in executing cleaning lists, inventory sheets, etc from management.
Maintain target cost objectives
Coordinate with bar and floor managers to make sure the operation is seamless between front and back of the house
Understanding of POS system plus office computers and systems software including Excel, Word, InDesign and proprietary programs
Maintenance of a professional work atmosphere in the restaurant, including a culture of cooperation between front and back of house
Regular oversight of the kitchen with duties including but not limited to the following:
Daily Pre-Opening Tasks
o Butchering and fabrication of meat and seafood
o Production of all house made items such as sausage, pate, terrines, kraut, cheese, and yoghurt
o Production of recipes for service
o Oversee prep work of line cooks for service. Ensure quality and accuracy of recipes
o Understanding of invoice coding
o Expedite the line; checking every plate for accuracy of plate presentation, quality and quantity of product.
o Help execute kitchen labor to the level of business
o Work the line
o Order products for service from approved vendors (meat, seafood, dairy, produce, and dry goods)
o Inventory of all food product
o Update inventory sheet
o Assist in executing rigorous training for staff relative to hygiene rules defined by the Multnomah County Health Department
o Assure strict compliance with all Multnomah County Health regulations
o Maintain cleanliness and order in trash room
o Maintain kitchen equipment
