Pastry Lamination

Bakeshop is looking for someone to join our lamination team!

We are a neighborhood retail and wholesale bakery in NE Portland owned and operated by James Beard Award-winning pastry chef, Kim Boyce. Kim uses a variety of whole-grain flours to bring unique flavors and textures to her rustic, sophisticated, and seasonal pastries. 

This is a full-time job, 6am - 4PM with three days off. Our ideal candidate works methodically and meticulously, both independently and as a member of a strong team. They also align with our company values of community, communication, kindness, and teamwork. 

The ability to move and communicate in a busy kitchen is required. A year or two in kitchens and/or graduation from culinary school with pastry focus is a plus. 

This position runs in tandem with another lamination person and thus requires teamwork and communication as well as someone who is self-motivated, precise, and able to produce to match wholesale and retail needs. Production includes the making and shaping of croissant and pie dough items, sheeting croissant and pastry doughs, shaping croissant and pastry items, prep tasks (including producing fillings and toppings), writing prep lists, taking accurate inventory, forecasting future production needs and effectively communicating those needs with the rest of the kitchen.
