  • Monitor and deliver minor ingredients into mixing area.  Ensure that the Sifter room is always kept neat and swept.
  • Assist with changeovers.
  • Ensure pans at final proofer are emptied.
  • Ensure proper FIFO (first in, first out) rotation of raw materials is used in the mixing area and corn meal.
  • Monitor the flour sifter and collect tailings at the required frequency.
  • Monitor the following areas for dough build-up and corn meal: dividers/ proofer pans/ areas below intermediate proofers/ under final proofer/ under indexers.
  • Monitor and change sugar tanks.
  • Monitor processing fork truck, change batteries, and fill out check sheets.
  • Maintain general housekeeping in all areas of processing as required, and run COP tanks when necessary.
  • Remove trash and salvage totes, and weigh and document any scrap product.
  • Supply all lines with raw materials, corn meal mix, mineral and corn oils, and miscellaneous operating supplies.
  • Relieve operators and other processing utilities, as well as other processing and packaging personnel, as assigned.
  • Keep sifters at final proofer filled when oven operator is unavailable, monitor recycling system and perform required checks and remove full barrels of recycled corn meal, document accurate lot codes and receiving dates on barrels.

Job Requirements:


•     Lifting requirements may include lifting 50 to 80 pound bags and the moving of 500 pound drums.

•     Must be able to drive a forklift and maintain a forklift operator’s license.

The area is environmentally controlled.

Associate must be able to read, write, keep accurate and legible records, monitor and enter data into a computerized workstation, and operate all required equipment so they can relieve other personnel. Associate will be trained on each position (including changeovers, teardown and sanitation). Length of training on each position will vary based on the associate’s individual training needs, but will generally not exceed the length of training time established for each position.  Associate should be able to perform the job proficiently after an additional two (2) weeks of experience for each position.
