This is exactly analogous to shopping at a clothing store and trying on different suits (or dresses) that you see in their window or on their racks. Why do you try them on? Well, the suits or dresses that look terrific in the window don’t always look so hot when you see them on you. The clothes don’t hang quite right, etc.

Your note about reading between the lines on a job announcement may be a bit misleading. When you go into a job interview and presume to know what the company really wants vs. what they put in print would seem to me to be pretty arrogant. I’ve tried that and have been cut short in the interview. Nobody likes someone to come into their house and tell them how you’re going to fix things for them when they didn’t ask you to. You will be able to adapt this advice to your technical/computer interviews.
At some point, usually at the conclusion of the interview, you may be asked, “Do you have any questions?” A common answer to this question is, “No, I think you’ve covered everything very well.” This is the wrong answer!
